Ingredients

  • Double Cream: 142ml carton double cream
  • Icing Sugar: 1 tbsp icing sugar
  • Coffee: cold coffee
  • Sponge Finger: 8 sponge fingers, halved
  • Chocolate: chocolate flakes
  • Ice Cream: Baileys ice cream
  • Baileys: 3 tbsp Baileys

Directions

  1. Press the sponge fingers into four glasses. Pour on enough cold coffee to soak the sponge.
  2. Add Baileys ice cream, double cream whipped with icing sugar and Baileys. Scatter with chocolate flakes.
