Chickpea & red pepper dip Recipe
Chickpea & red pepper dip is a Healthy snack recipe for 4 people, takes only 20 mins; recipe has chickpea, garlic clove and extra-virgin olive oil.
Ingredients
- Coriander - small handful chopped fresh coriander
- Garlic Clove - 1 garlic clove, crushed
- Extra Virgin Olive Oil - 4 tbsp extra-virgin olive oil
- Pepper - 2 roasted, deseeded red peppers, chopped (from a jar is fine)
- Chickpea - 390g can chickpeas, drained and rinsed
- Lemon Juice - squeeze lemon juice
- Pitta Bread - toasted pitta bread, to serve
Instructions
- Place the chickpeas in a food processor with the garlic, olive oil, lemon juice, red peppers and coriander. Blitz to a paste. Season to taste. Serve in a bowl with toasted pitta breads.
