Chopped herb & pomegranate salad Recipe
Chopped herb & pomegranate salad is a Healthy salad recipe for 4 people, takes only 20 mins; recipe has lemon, pomegranate molasses and olive oil.
Ingredients
- Olive Oil - 1 tbsp olive oil
- Tomato - 2 large tomatoes, deseeded and finely chopped
- Mint - small bunch mint, all chopped
- Sugar - 1 tsp sugar
- Dill - small bunch dill, chopped
- Parsley - small bunch parsley, chopped
- Lemon - juice and zest 1 lemon
- Cucumber - 2 Mediterranean cucumber (or 1 regular), deseeded and finely chopped
- Pomegranate - 110g tub pomegranate seeds (or seeds from 1 pomegranate)
- Pomegranate Molasses - 1 tbsp pomegranate molasses
Instructions
- In a large bowl, whisk together the lemon zest and juice, pomegranate molasses, olive oil, sugar and some seasoning.
- Add cucumbers, tomatoes, deseeded and finely chopped, pomegranate seeds and parsley, dill and mint. Toss everything together and serve.
