Chorizo & chickpea stew Recipe
Chorizo & chickpea stew is a 15-minute meal recipe for 2 people, takes only 20 mins; recipe has chorizo, red onion and garlic clove.
Ingredients
- Flat Leaf Parsley - 1 handful flat-leaf parsley, chopped
- Garlic Clove - 2 garlic cloves, sliced
- Cherry Tomato - 400g can cherry tomato
- Smoked Paprika - 1 tsp smoked paprika
- Red Onion - 1 red onion, sliced
- Chickpea - 400g can chickpea, drained
- Lemon - juice 1 lemon
- Cumin Seed - 1 tsp cumin seed
- Chorizo - 4 cooking chorizo sausages, cut into thick slices
- Sourdough Bread - toasted sourdough bread, to serve
Instructions
- In a frying pan, fry the chorizo, onion and garlic for 5 mins or until the chorizo is browning on the outside. Drain the excess oil, then stir in the spices.
- Pour in the tomatoes, lemon juice, chickpeas and seasoning. Bubble for 5 mins more to thicken slightly, then sprinkle over the parsley. Serve with toasted sourdough.
