Crunchy winter salad Recipe
Crunchy winter salad is a Quick winter recipe for 8 - 10 people, takes only 20 mins; recipe has carrot, celeriac and onion.
Ingredients
- Olive Oil - 4 tbsp olive oil
- Onion - 1 red onion, sliced
- Carrot - 450g carrots
- Dijon Mustard - 1 tsp Dijon mustard
- Red Wine Vinegar - 2 tbsp red wine vinegar
- Celeriac - 1 small celeriac
- Mixed Nut - 50g chopped mixed nuts, walnuts, hazelnuts or pecans are good
Instructions
- Peel the carrots and celeriac and grate in a food processor. Mix together with the onion and nuts. Whisk the oil and vinegar with some mustard, salt and pepper and toss with the salad immediately to stop the celeriac going brown. Cover and keep in the fridge for up to a day.
