Green cucumber & mint gazpacho Recipe
Green cucumber & mint gazpacho is a 200 calorie meal recipe for 2 people, takes only 20 mins; recipe has cucumber, yellow pepper and garlic clove.
Ingredients
- Garlic Clove - 2 garlic cloves, crushed
- Spring Onion - bunch spring onions, chopped
- Natural Yogurt - 150ml pot fat-free natural yogurt
- Mint - small bunch mint, chopped
- Cucumber - 1 cucumber, halved lengthways, deseeded and roughly chopped
- Chive - snipped chives, to serve
- White Wine Vinegar - 2 tbsp white wine vinegar
- Avocado - 1 small avocado, chopped
- Yellow Pepper - 1 yellow pepper, deseeded and roughly chopped
- Tabasco Sauce - few shakes green Tabasco sauce
Instructions
- In a food processor or blender, blitz all the ingredients, reserving half the mint and yogurt, until smooth. Add a little extra vinegar, Tabasco and seasoning to taste, then add a splash of water if you like it thinner.
- Chill until very cold, then serve with a dollop more yogurt, mint, chives and a few ice cubes if you like. The soup will keep in the fridge for 2 days - just give it a good stir before serving.
