Ingredients

  • Garlic Clove: 1 garlic clove, crushed
  • Olive Oil: 1 tbsp olive oil
  • Onion: 1 large onion, sliced
  • Parsley: 1 large or 2 small bunches parsley, chopped
  • Lemon: zest and juice 1 lemon
  • Butter Bean: 2 x 400g/14oz cans butter beans, rinsed and drained

Directions

  1. Heat the oil in a pan, add the onion and cook for 10-15 mins until soft. Add the garlic for the final min, then stir in the beans to heat through. Add the lemon zest and juice. Stir in the parsley to serve.
