Lentil fritters Recipe
Lentil fritters is a Healthy vegan recipe for 2 people, takes only 10 mins; recipe has lentils, coriander and spring onion.
Ingredients
- Coriander - handful of chopped coriander
- Spring Onion - 1 chopped spring onion
- Carrot - 2 carrots
- Courgette - 2 courgettes
- Lime - juice of 1 lime
- Sesame Oil - 1/2 tsp sesame oil
- Rapeseed Oil - 1 tbsp rapeseed oil
- Lentils - 300g leftover basic lentils (see our recipe)
- Gram Flour - 50g gram flour
- Sesame Seeds - 1/2 tsp sesame seeds
Instructions
- Mix theleftover lentilswith the chopped coriander, spring onion and gram flour, then set aside. Use a peeler to cut the carrots and courgettes into long ribbons, then toss the ribbons with the sesame seeds and coriander in sesame oil and the lime juice.
- Heat the rapeseed oil in a frying pan. Spoon in four dollops of the dhal and flatten into patties. Fry each side until golden and serve with the ribbon salad.
