Ingredients

  • Basil Leaf: 8 fresh basil leaves
  • Sundried Tomato: 8 sundried tomatoes
  • Mozzarella: 8 slices mozzarella ( 1/2 a ball) (vegetarian brand, if required)
  • Crackers: 16 Ritz crackers

Directions

  1. Preheat the grill to a high heat. Line a baking sheet with parchment and put 8 ritz crackers on top with a slice of mozzarella on each. Grill for 1 min until the cheese starts to melt.
  2. Top with a sundried tomato and a basil leaf and sandwich another Ritz cracker on top.
