Peas with roasted shallots Recipe
Healthy Christmas side dish recipe for 8 people, takes only 15 mins; recipe has shallot, golden caster sugar, frozen pea, mint, extra-virgin olive oil and lemon.
Ingredients
- Extra Virgin Olive Oil - 3 tbsp good-quality extra-virgin olive oil
- Mint - bunch mint, chopped
- Lemon - juice 1/2 lemon
- Frozen Pea - 1kg frozen pea
- Shallot - 550g shallot, peeled and halved
- Golden Caster Sugar - 85g golden caster sugar
Instructions
- Turn oven to 200C/180C fan/gas 6. Toss the shallots in the sugar. Heat a large ovenproof frying pan until hot, and add the shallots. Cook for a few mins to caramelise the outside to a nice golden colour, then transfer to the oven for 5 mins to cook through.
- Cook the peas in boiling salted water for 2 mins until tender, drain and mix with the shallots, mint, olive oil and lemon juice. Season and serve with your favourite roast.
