Ingredients

  • Olive Oil: 3 tbsp olive oil
  • Red Onion: 1 red onion, finely sliced
  • Lime: juice 1 lime
  • White Wine Vinegar: 2 tsp white wine vinegar
  • Smoked Salmon: 140g smoked salmon
  • Black Pepper: a little black pepper
  • Fennel: 1 fennel, finely sliced

Directions

  1. Divide the smoked salmon between 4 plates. Toss the fennel, red onion, lime juice, white wine vinegar, olive oil and a little black pepper. Arrange over the salmon and serve.
