Smoked mackerel & harissa potato salad Recipe

Ingredients
- Red Onion - 1 red onion, diced
- Tomato - 3 large tomatoes, deseeded and diced
- Rocket - 2-3 good handfuls rocket leaves
- Lemon - juice 1/2 lemon
- Creme Fraiche - 5 tbsp creme fraiche
- Harissa - 1 heaped tbsp harissa
- Potatoes - cooked potatoes (from 'Griddled lamb with spiced new potatoes' see 'Goes well with')
- Smoked Mackerel - 300g smoked mackerel, flaked
Instructions
- Mix the creme fraiche, harissa and lemon juice, then season to taste. In a large bowl, toss together the potatoes, tomatoes and onion, then stir in the dressing to coat. Scatter with the flaked mackerel and rocket. Stir together before serving.
