Smoked mackerel & harissa potato salad
Ingredients
- creme-fraiche - 5 tbsp creme fraiche
- harissa - 1 heaped tbsp harissa
- lemon - juice 1/2 lemon
- potatoes - cooked potatoes (from 'Griddled lamb with spiced new potatoes' see 'Goes well with')
- tomato - 3 large tomatoes, deseeded and diced
- red-onion - 1 red onion, diced
- smoked-mackerel - 300g smoked mackerel, flaked
- rocket - 2-3 good handfuls rocket leaves
Instructions
- Mix the creme fraiche, harissa and lemon juice, then season to taste. In a large bowl, toss together the potatoes, tomatoes and onion, then stir in the dressing to coat. Scatter with the flaked mackerel and rocket. Stir together before serving.
