- Vegetable Stock - 100ml vegetable stock
- Spring Onion - 1 spring onion, sliced
- Lemon - juice 1/2 lemon
- Avocado - 1/2 an avocado
- Watercress - 100g watercress
- Mixed Seed - 2 tbsp mixed seeds, plus extra to serve
- Spinach - 100g spinach
- Rice - 100g cooked rice
Instructions
- Put the spinach, watercress, spring onion, vegetable stock, avocado, cooked rice, lemon juice and mixed seeds in ablenderwith seasoning. Whizz until smooth. Heat until piping hot. Scatter over some toasted seeds if you want added crunch.
