Tomato, watermelon & feta salad with mint dressing
Ingredients
- olive-oil - 2 tbsp olive oil
- red-wine-vinegar - 1 tbsp red wine vinegar
- chilli-flakes - 1/4 tsp chilli flakes
- mint - 2 tbsp chopped mint
- tomato - 4 tomatoes, chopped
- watermelon - 500g/1lb 2oz watermelon, cut into chunks
- feta-cheese - 200g pack feta cheese, crumbled
Instructions
- Make the dressing by mixing the oil, vinegar, chilli flakes and mint with some seasoning.
- Put the tomatoes and watermelon in a bowl. Pour over the dressing and leave to stand for 10 mins to allow the fruit to get really juicy. Gently stir through the feta, then serve.
