Trout & spelt salad with watercress
Ingredients
- broccoli - 85g thin-stemmed broccoli
- orange - juice 1/2 orange
- flat-leaf-parsley - 1 tbsp chopped flat leaf parsley
- spelt - 140g ready-to-eat spelt
- trout - 140g hot-smoked trout, flaked
- watercress - large handful watercress
Instructions
- Steam the broccoli for 3 mins until al dente. Mix together the orange juice, parsley and spelt, then top with the broccoli, trout and watercress.
