Turkey, bacon & avocado mini bagels Recipe
Turkey, bacon & avocado mini bagels is a Leftover Christmas turkey recipe for 1 people, takes only 20 mins; recipe has avocado, lemon and mini bagel.
Ingredients
- Lemon - few drops lemon juice
- Avocado - 1/2 small, ripe avocado, peeled
- Turkey - 50g sliced cooked turkey or chicken
- Spinach - handful baby spinach or rocket leaves
- Bacon - 4 slices crispy cooked bacon
- Cranberry Sauce - 1 tbsp cranberry sauce
- Mini Bagel - 2 mini bagels, split in half
Instructions
- Mash the avocado with the lemon juice and a pinch of salt. Spread 2 bagel halves with cranberry sauce and 2 with avocado. Top the avocado halves with the turkey, bacon and leaves, then sandwich together with the cranberry halves. Wrap in cling film and chill until lunchtime.
