Ingredients

  • Spinach: 100g spinach
  • Watercress: 100g watercress
  • Spring Onion: 1 spring onion, sliced
  • Vegetable Stock: 100ml vegetable stock
  • Avocado: 1/2 an avocado
  • Rice: 100g cooked rice
  • Lemon: juice 1/2 lemon
  • Mixed Seed: 2 tbsp mixed seeds, plus extra to serve

Directions

  1. Put the spinach, watercress, spring onion, vegetable stock, avocado, cooked rice, lemon juice and mixed seeds in ablenderwith seasoning. Whizz until smooth. Heat until piping hot. Scatter over some toasted seeds if you want added crunch.
