Cacciatore chicken Recipe

Cacciatore chicken is a Paleo recipe for 4 people, takes only 45 mins; recipe has onion, garlic clove and olive oil.

Ingredients

  • Garlic Clove - 2 garlic cloves, sliced
  • Chicken Breast - 4 chicken breasts
  • Basil Leaf - small handful basil leaves
  • Olive Oil - 1 tsp olive oil
  • Onion - 1 onion, sliced
  • Chopped Tomato - 400g can chopped tomato
  • Vegetable - favourite seasonal vegetables, to serve (optional)
  • Rosemary - 2 tbsp chopped rosemary leaves

Instructions

  1. Fry the onion and garlic in the oil until softened. Add the tomatoes, rosemary and seasoning, and cook for 10-15 mins until thickened.
  2. Heat oven to 180C/160C fan/gas 4. Put the chicken on a baking tray, top with the sauce and bake for 15-20 mins until cooked through. Serve scattered with basil, with your favourite veg, if you like.
