Chicken, carrot & avocado rolls Recipe

Healthy sandwich recipe for 3 little children or 2 bigger ones people, takes only 20 mins; recipe has soft cheese, flour tortilla, chicken breast, carrot, avocado and rocket.

Ingredients

  • Chicken Breast - 1 cooked skinless chicken breast, coarsely shredded
  • Carrot - 1 large carrot, grated or shredded
  • Rocket - handful rocket leaves
  • Flour Tortilla - 3 flour tortillas
  • Avocado - 1 large avocado, stoned and sliced
  • Soft Cheese - 75g low-fat soft cheese

Instructions

  1. Spread the cheese over the tortillas and top with the chicken, carrot, avocado and rocket.
  2. Tightly roll up each tortilla. Wrap tightly in cling film, twisting the ends firmly to seal, and chill until ready.
  3. Unwrap and cut each roll into 4 chunks to add to your lunchboxes.
