Ingredients

  • Mint: small bunch mint
  • Lemon: juice 1 lemon
  • Cucumber: 1/2 cucumber, sliced
  • White Wine: 750ml white wine
  • Melon: 1 Galia melon
  • Ice: ice
  • Sparkling Water: 300ml sparkling water or sparkling wine
  • Pimm'S: 100ml Pimm's
  • Orange Liqueur: 50ml orange liqueur (we used Cointreau)

Directions

  1. Cut the melon in half and scoop out and discard the seeds. Using a melon baller cut the fruit into spheres and place in a large punch bowl. Add the lemon juice, Pimm's, orange liqueur and white wine then chill in the fridge for 1-2 hrs.
  2. To serve, add the cucumber pieces, mint sprigs and top with sparkling water and ice.
