Ingredients
- Coriander: handful chopped coriander, plus extra
- Extra Virgin Olive Oil: 2 tbsp extra-virgin olive oil
- Carrot: 500g carrot, halved and cut into thin rounds
- Lemon Juice: 1 tbsp lemon juice
- Harissa Paste: harissa paste
Directions
- Place the carrots in a steamer set over a pan of boiling water and cook for 7-10 mins until just soft. Mix together the remaining ingredients, then toss the warm carrots through the dressing.
- Sprinkle with extra chopped coriander to serve.
