Ingredients

  • Mint: large bunch fresh mint (about 80g), leaves picked and chopped
  • Cider Vinegar: 4 tbsp cider vinegar
  • Brown Sugar: 3 tsp soft brown sugar
  • Raisin: 100g raisin

Directions

  1. Add all the ingredients to a food processor along with 4 tbsp water, and pulse to a chunky salsa texture. Spoon into a bowl and serve alongside the lamb.
