Mexican veggie wraps Recipe

Mexican Vegetarian chilli recipe for 4 people, takes only 25 mins; recipe has butternut squash, red chilli, cajun seasoning, oil, refried bean, tomato, yogurt, lime, rocket and flour tortilla.

Ingredients

  • Yogurt - 4 tbsp yogurt
  • Red Chilli - 1 red chilli, deseeded and chopped
  • Tomato - 2 tomatoes, chopped
  • Rocket - 50g bag rocket
  • Lime - zest and juice 1 lime
  • Butternut Squash - 1/2 butternut squash, peeled and cut into large wedges
  • Cajun Seasoning - 1 tbsp Cajun seasoning mix
  • Oil - 1 tbsp oil
  • Refried Bean - 400g can refried bean
  • Flour Tortilla - 8 flour tortillas

Instructions

  1. Heat oven to 200C/180C fan/gas 6. In a roasting tray, toss the squash with the chilli, spices, oil and seasoning, then roast for 25 mins until tender. Gently heat the refried beans with the chopped tomatoes until warmed through. Mix the yogurt with lime zest and juice.
  2. Warm wraps according to pack instructions and spread with a thin layer of beans. Top with squash, some rocket, and a dollop of lime yogurt.
