Pea & feta toasts Recipe
Vegetarian Christmas canape recipe for 5 as a nibble, or 10 with other nibbles people, takes only 20 mins; recipe has frozen pea, natural yogurt, mint, lemon, baguette, feta cheese and olive oil.
Ingredients
- Olive Oil - drizzle olive oil
- Natural Yogurt - 3 tbsp low-fat natural yogurt
- Mint - 2 tbsp chopped mint, plus a few extra leaves, torn
- Feta Cheese - 85g feta cheese, crumbled
- Lemon - zest and juice 1/2 lemon
- Baguette - 15 slices cut from a thin baguette, lightly toasted
- Frozen Pea - 300g frozen pea, left at room temperature to defrost
Instructions
- Put the defrosted peas, yogurt, chopped mint, lemon zest and juice and some seasoning in a bowl. Mash well with a potato masher. Divide the pea mixture between the toasts, then scatter a little feta on top of each with some more pepper. Arrange on a plate, scatter with more mint leaves and a drizzle of oil. Serve.
