Ingredients

  • Spring Onion: bunch spring onions, sliced
  • Natural Yogurt: 150ml natural yogurt
  • Mint: small bunch mint, roughly chopped
  • Sugar: 1 tsp sugar
  • Little Gem Lettuce: 2 Little Gem lettuces, leaves separated
  • Pea: 200g pea, defrosted
  • Ham: 250g ham, shredded
  • New Potato: 300g cooked new potato, sliced

Directions

  1. Cook peas in boiling water for 1 min. Drain and rinse under cold water. Toss with ham, leaves, spring onions, potatoes and two-thirds of mint. Mix remaining mint with yogurt and sugar. Drizzle over salad.
