Ingredients
- Spring Onion: bunch spring onions, sliced
- Natural Yogurt: 150ml natural yogurt
- Mint: small bunch mint, roughly chopped
- Sugar: 1 tsp sugar
- Little Gem Lettuce: 2 Little Gem lettuces, leaves separated
- Pea: 200g pea, defrosted
- Ham: 250g ham, shredded
- New Potato: 300g cooked new potato, sliced
Directions
- Cook peas in boiling water for 1 min. Drain and rinse under cold water. Toss with ham, leaves, spring onions, potatoes and two-thirds of mint. Mix remaining mint with yogurt and sugar. Drizzle over salad.
