Quick sushi bowl

Quick summer recipe for 2 people, takes only 10 mins; recipe has sushi rice, sugar, rice vinegar, salmon fillets, carrot, red cabbage, radishes, ginger, cucumber, soy sauce and sesame seeds.

Ingredients

  • Carrot: 1 large carrot, cut into ribbons
  • Sugar: pinch sugar
  • Soy Sauce: 1 tbsp soy sauce
  • Cucumber: 1/4 cucumber, halved longways and sliced
  • Red Cabbage: 4 tbsp pickled red cabbage
  • Ginger: thumb-sized piece ginger, finely sliced
  • Sushi Rice: 150g sushi rice
  • Rice Vinegar: 1 tbsp rice vinegar
  • Sesame Seeds: 1 tsp sesame seeds (optional)
  • Salmon Fillets: 2 cooked salmon fillets (we used teriyaki marinated)
  • Radishes: handful radishes, sliced

Directions

  1. Cook the sushi rice following pack instructions. When cooked, sprinkle over the sugar and vinegar, cover and set aside for 5 mins.
  2. Divide the rice between two bowls and arrange the other ingredients on top, then drizzle with the soy sauce and sesame seeds, if using.
