Red cabbage with apples Recipe
Red cabbage with apples is a Healthy Christmas side dish recipe for 8 people, takes only 45 mins; recipe has red cabbage, bay leaf and star anise.
Ingredients
- Vegetable Stock - 200ml vegetable stock or water
- Cider Vinegar - 75ml cider vinegar
- Bay Leaf - 2 bay leaves
- Red Cabbage - 1 red cabbage, finely shredded
- Apple - 2 apples, cored and cut into wedges
- Ground Cinnamon - 1/2 tsp ground cinnamon
- Golden Caster Sugar - 50g golden caster sugar
- Star Anise - 5 star anise
Instructions
- Place all the ingredients except for the apples in a large saucepan and season. Place over a medium heat, bring to the boil, then turn down the heat and simmer for 30 mins. Add the apples, then continue cooking for 15 mins until tender.
