Ingredients

  • Coriander: small pack coriander
  • Garlic Clove: 1 garlic clove, roughly chopped
  • Onion: 1 white onion, chopped
  • Lime: 1 lime, juiced
  • Avocado: 1 avocado, cut into small cubes
  • Green Chillies: 2 green chillies, roughly chopped
  • Tomatillos: 400g tomatillos

Directions

  1. Put the tomatillos in a pan of boiling water, cook for 3 mins or until the skins split, remove with a slotted spoon and cool for 5-10 mins. Blitz in afood processorwith the coriander, onion, chilli, garlic and lime. Tip into a bowl, stir in the avocado and season to taste.
