Ingredients

  • Flat Leaf Parsley: 1 tbsp chopped flat leaf parsley
  • Watercress: large handful watercress
  • Broccoli: 85g thin-stemmed broccoli
  • Orange: juice 1/2 orange
  • Spelt: 140g ready-to-eat spelt
  • Trout: 140g hot-smoked trout, flaked

Directions

  1. Steam the broccoli for 3 mins until al dente. Mix together the orange juice, parsley and spelt, then top with the broccoli, trout and watercress.
