Ingredients
- Onion: 200g chopped raw vegetables, such as onions, celery and carrots
- Oil: 1 tbsp oil
- Creme Fraiche: creme fraiche and fresh herbs, to serve
- Potato: 300g potato
- Stock: 700ml stock
Directions
- Fry 200gchoppedraw vegetables with 300g potatoes,peeledand cubed, in 1 tbsp oil for a few mins until beginning to soften.
- Cover with 700ml stock andsimmerfor 10-15 mins until the veg is tender.Blenduntil smooth, then season.
- Serve with a dollop of creme fraiche and some fresh herbs.Will freeze for up to 1 month.
