Ingredients

  • Mint: few mint sprigs, leaves picked
  • Lemon: 2 lemons, cut into quarters, pips removed
  • Blackberry: 150g punnet blackberries
  • Icing Sugar: 50g icing sugar
  • Prosecco: fizzy water or prosecco, to serve

Directions

  1. Put the lemons, blackberries, mint leaves, sugar and 200ml water into a food processor. Blitz until everything is finely chopped and juicy. Strain through a fine sieve, bottle and chill until ready to drink. Will keep for up to a week. Top up with an equal measure of chilled fizzy water or Prosecco to serve.
