Carrot cake overnight oats Recipe

Carrot cake overnight oats is a Healthy breakfast recipe for 1 people, takes only 20 mins; recipe has carrot, mixed spice and cinnamon.

Ingredients

  • Carrot - 40g grated carrot
  • Greek Yogurt - 1 tbsp Greek yogurt
  • Cinnamon - 1/4 tsp cinnamon
  • Honey - 1 tsp honey
  • Mixed Spice - a big pinch of mixed spice
  • Sultanas - 1 tsp sultanas
  • Rolled Porridge Oats - 50g rolled porridge oats

Instructions

  1. Mix the grated carrot, mixed spice and cinnamon with the oats, 150ml water and a pinch of salt, then cover and chill in the fridge overnight.
  2. The next day, stir in the honey and sultanas then top with Greek yogurt.
