Egg & new potato salad Recipe

Egg & new potato salad is a Low FODMAP recipe for 4 - 8 people, takes only 20 mins; recipe has new potato, olive oil and lemon.

Ingredients

  • Olive Oil - 2 tbsp olive oil
  • Egg - hard boiled egg
  • Parsley - handful chopped parsley
  • Rocket - bag of wild rocket
  • Lemon - juice of 1/2 lemon
  • Cucumber - cucumber, diced, to serve
  • New Potato - hot boiled new potatoes

Instructions

  1. Toss some hot boiled new potatoes with the olive oil, lemon juice and parsley. Leave to cool, then toss with quartered hard-boiled eggs. Toss with wild rocket leaves and some diced cucumber to serve.
