Gooseberry & elderflower fizz

Ingredients
- Lemon: juice 1/2 lemon
- Caster Sugar: 1 tbsp caster sugar
- Elderflower Cordial: 3 tbsp elderflower cordial
- Gooseberry: 12 gooseberries
- Wine: chilled sparkling wine, for topping up (we used Prosecco)
Directions
- Tip gooseberries and sugar into a cocktail shaker or large jam jar with a lid. Using the end of a rolling pin, mush the gooseberries and sugar together. Add lemon juice, cordial and 4 ice cubes, pop on the lid and shake well. Strain into glasses and top up with white wine, then stir before serving.
