Italian-style beef stew Recipe

Italian-style beef stew is a Paleo recipe for 4 people, takes only 20 mins; recipe has onion, garlic and olive oil.

Ingredients

  • Beef - 300g pack beef stir-fry strips, or use beef steak, thinly sliced
  • Olive Oil - 2 tbsp olive oil
  • Onion - 1 onion, sliced
  • Tomato - 400g can chopped tomato
  • Olive - handful pitted olives
  • Rosemary - sprig rosemary, chopped
  • Yellow Pepper - 1 yellow pepper, deseeded and thinly sliced
  • Garlic - 1 garlic clove, sliced

Instructions

  1. In a large saucepan, cook onion and garlic in olive oil for 5 mins until softened and turning golden. Tip in the beef strips, pepper, tomatoes and rosemary, then bring to the boil. Simmer for 15 mins until the meat is cooked through, adding some boiling water if needed. Stir through the olives and serve with mash or polenta.
