Jerk spice mix Recipe
Jerk spice mix is a Caribbean recipe for 4 - 8 people, takes only 20 mins; recipe has ground cinnamon, black peppercorn and thyme.
Ingredients
- Cayenne Pepper - 1 1/2 tsp cayenne pepper
- Thyme - 1 tbsp dried thyme
- Nutmeg - 1/2 nutmeg, grated
- Black Peppercorn - 2 tbsp black peppercorn
- Ground Cinnamon - 2 tbsp ground cinnamon or 2 cinnamon sticks
- Allspice - 2 tsp allspice berries
Instructions
- Toast the whole spices in a small pan until they are aromatic and have turned a shade or two darker. Don't be tempted to skip this stage, as it really enhances the flavours.
- Tip into a spice grinder (or use a pestle and mortar), then add the ready-ground spices and dried herbs if required, and crush to a fine powder. Store in a sealed jar for up to six months.
