Peach & blue cheese salad Recipe
Peach & blue cheese salad is a Light supper recipe for 4 people, takes only 20 mins; recipe has ciabatta, olive oil and clear honey.
Ingredients
- Olive Oil - 2 tbsp olive oil
- Mint - handful of mint leaves, torn
- Lemon - squeeze of lemon juice
- Ciabatta - 1/2 ciabatta loaf, sliced
- Mixed Salad Leaves - 1 bag of mixed salad leaves
- Clear Honey - 1 tsp clear honey
- Peach - 4 peaches, each cut into 8 pieces
- Blue Cheese - 140g blue cheese or Brie, cut into chunks
- Sugar Snap Pea - 100g sugar snap peas, sliced in half lengthways
Instructions
- Toast the ciabatta slices and drizzle with 1 tbsp oil. Make the dressing by whisking together the remaining oil, honey and lemon juice, then season to taste. Mix all of the other ingredients together in a large bowl and toss with the dressing before serving.
