Ingredients

  • Spring Onion: bunch spring onion, sliced
  • Sugar: 1/2 tsp sugar
  • Rocket: small bag rocket leaves
  • Lemon: zest and juice 1 lemon
  • Sesame Oil: 2 tbsp sesame oil
  • Cucumber: 1/2 cucumber, deseeded and sliced
  • Smoked Salmon: large handful leftover smoked salmon (about 75g)
  • Rice: 500g cooked rice, cooled (about 300g uncooked rice)
  • Rice Vinegar: 2 tbsp rice vinegar
  • Chilli Sauce: 1 tsp chilli sauce (optional), we used sriracha

Directions

  1. Whisk the dressing ingredients and set aside. Toss together the salad ingredients in a large bowl with the dressing. Serve from the bowl or pile onto a serving platter.
