Smoked salmon rice salad Recipe
Smoked salmon rice salad is a Low-calorie Christmas recipe for 4 - 6 people, takes only 20 mins; recipe has rice, spring onion and cucumber.
Ingredients
- Spring Onion - bunch spring onion, sliced
- Sugar - 1/2 tsp sugar
- Rocket - small bag rocket leaves
- Lemon - zest and juice 1 lemon
- Sesame Oil - 2 tbsp sesame oil
- Cucumber - 1/2 cucumber, deseeded and sliced
- Smoked Salmon - large handful leftover smoked salmon (about 75g)
- Rice - 500g cooked rice, cooled (about 300g uncooked rice)
- Rice Vinegar - 2 tbsp rice vinegar
- Chilli Sauce - 1 tsp chilli sauce (optional), we used sriracha
Instructions
- Whisk the dressing ingredients and set aside. Toss together the salad ingredients in a large bowl with the dressing. Serve from the bowl or pile onto a serving platter.
