Summer potato salad Recipe
Summer potato salad is a Family picnic recipe for 6 people, takes only 12 mins; recipe has new potato, buttermilk and mayonnaise.
Ingredients
- Mayonnaise - 2 tbsp light mayonnaise
- White Wine Vinegar - 1 tbsp white wine vinegar
- Dijon Mustard - 1 tbsp Dijon mustard
- New Potato - 750g new potato
- Caster Sugar - 1/2 tsp caster sugar
- Poppy Seed - 1 tbsp poppy seed
- Radish - 100g sliced radish
- Buttermilk - 75ml buttermilk
- Cress - 20g pack mustard cress, to serve
Instructions
- Put potatoes in a pan of salted water, bring to the boil, then simmer for 12 mins until cooked through. Drain and cool.
- Whisk buttermilk, light mayonnaise, mustard, vinegar and caster sugar with seasoning. Once spuds are cool, toss with the buttermilk dressing, radishes and poppy seeds. Sprinkle over cress to serve.
