Carrot, orange & avocado salad Recipe

Carrot, orange & avocado salad is a Healthy salad recipe for 4 people, takes only 20 mins; recipe has orange, carrot and rocket.

Ingredients

  • Olive Oil - 1 tbsp olive oil
  • Carrot - 3 carrots, halved lengthways and sliced with a peeler
  • Rocket - 70g bag rocket
  • Avocado - 2 avocados, stoned, peeled and sliced
  • Orange - 2 oranges, plus zest and juice of 1

Instructions

  1. Cut the segments from 2 of the oranges and put in a bowl with the carrots, rocket and avocados. Whisk together the orange juice, zest and oil. Toss through the salad, and season.
