Carrot & sugar snap salad Recipe
Carrot & sugar snap salad is a Summer family recipe for 4 people, takes only 20 mins; recipe has hoisin sauce, lime and ginger.
Ingredients
- Coriander - 1/2 small bunch coriander, roughly chopped
- Carrot - 3 carrots, coarsely grated
- Lime - juice 1/2 lime
- Hoisin Sauce - 1 tbsp hoisin sauce
- Ginger - 2cm/ 3/4 in fresh ginger, peeled and grated
- Sugar Snap Pea - 200g sugar snap peas, thinly sliced
Instructions
- Make the dressing by whisking the hoisin, lime juice and ginger with 2 tbsp cold water.
- In a large bowl, mix the sugar snap peas, carrots and coriander. Pour over the dressing and mix to coat.
