Ingredients

  • Garlic Clove: 1 garlic clove, crushed
  • Dill: 4 tbsp chopped dill, plus extra fronds, to garnish
  • Feta Cheese: 200g feta cheese
  • Cucumber: 1 large cucumber, halved lengthways, seeds scooped out and discarded
  • Ricotta: 100g ricotta
  • Black Pepper: cracked black pepper, to serve

Directions

  1. Add the garlic, feta, ricotta and dill to a food processor and whizz until smooth but thick.
  2. Fill the middle of the cucumber with the cheese mix and smooth over. Cut into 3cm-thick slices. Sprinkle with cracked pepper and garnish with the dill fronds.
