Lettuce, chicory & apple salad with poppy seed dressing

Ingredients
- Vegetable Oil: 5 tbsp vegetable oil
- Cherry Tomato: 150g cherry tomato, halved
- Lemon Juice: 5 tbsp lemon juice
- Dijon Mustard: 1 heaped tbsp Dijon mustard
- Shallot: 1 small shallot, finely chopped
- Apple: 2 Delicious apples, cored and sliced
- Honey: 5 tbsp honey
- Poppy Seed: 1 tsp poppy seed
- Walnut: 100g toasted walnut, roughly chopped
- Salad Leaf: 200g bag mixed crispy salad leaves
- Chicory: 2 heads purple or white chicory, trimmed and separated into leaves
Directions
- Arrange the salad ingredients on a large platter or big salad bowl. Pour the dressing ingredients into a glass jar with a fitted lid, add some seasoning and shake well. When ready to serve, pour the dressing over and toss everything together.
