Ingredients

  • Vegetable Oil: 5 tbsp vegetable oil
  • Cherry Tomato: 150g cherry tomato, halved
  • Lemon Juice: 5 tbsp lemon juice
  • Dijon Mustard: 1 heaped tbsp Dijon mustard
  • Shallot: 1 small shallot, finely chopped
  • Apple: 2 Delicious apples, cored and sliced
  • Honey: 5 tbsp honey
  • Poppy Seed: 1 tsp poppy seed
  • Walnut: 100g toasted walnut, roughly chopped
  • Salad Leaf: 200g bag mixed crispy salad leaves
  • Chicory: 2 heads purple or white chicory, trimmed and separated into leaves

Directions

  1. Arrange the salad ingredients on a large platter or big salad bowl. Pour the dressing ingredients into a glass jar with a fitted lid, add some seasoning and shake well. When ready to serve, pour the dressing over and toss everything together.
