Thai chicken salad Recipe
Thai chicken salad is a Healthy Thai recipe for 4 people, takes only 20 mins; recipe has chinese leaf, chicken breast and mango.
Ingredients
- Chicken Breast - 2 cooked chicken breasts or 200g leftover cooked chicken, shredded
- Red Chilli - 2 large red chillies, deseeded and finely chopped
- Spring Onion - 6 spring onions, sliced diagonally
- Mint - bunch mint, leaves picked
- Sugar - pinch of sugar
- Lime - juice 4 limes
- Sesame Oil - 4 tbsp sesame oil
- Fish Sauce - splash of fish sauce
- Mango - 1 mango, peeled, stoned and thinly sliced
- Peanut - 3 tbsp salted peanut or cashew nuts, roughly chopped
- Chinese Leaf - 1 head Chinese leaf, shredded
Instructions
- To make the dressing, mix together all the ingredients and stir to dissolve the sugar.
- In a large bowl, mix all the salad ingredients except the nuts. Toss with the dressing and season with black pepper. Scatter with the nuts to serve.
