Ham & watercress salad with clementine dressing Recipe
Low-calorie Christmas recipe for 4 people, takes only 20 mins; recipe has grains, ham, watercress, fennel bulb, hazelnut, parsley, cranberry, extra virgin olive oil, clementine, dijon mustard and clear honey.
Ingredients
- Extra Virgin Olive Oil - 2 tbsp extra virgin olive oil
- Parsley - small bunch parsley, roughly chopped
- Dijon Mustard - 2 1/2 tsp Dijon mustard
- Watercress - 100g bag watercress
- Ham - 280g leftover ham, shredded or cut into chunks
- Fennel Bulb - 1 small fennel bulb, thinly sliced
- Clear Honey - good drizzle of clear honey
- Cranberry - 1 1/2 tbsp dried cranberries, roughly chopped
- Hazelnut - 50g hazelnuts, toasted and roughly chopped
- Clementine - zest 1 clementine and juice of 2
- Grains - 250g pouch ready-to-eat mixed grains
Instructions
- For the dressing, put all the ingredients in a jar, along with some seasoning, pop on the lid and give it a really good shake.
- Tip the grains into a large bowl and toss through the ham, watercress, fennel, hazelnuts and parsley. Just before serving, pour over the dressing and gently toss to combine. Transfer to a serving platter and scatter over the dried cranberries.
